Abigail’s Long Grain and Orzo - Pilaf

RECIPE SERVES 4

WHAT YOU WILL NEED

  • 1 Pack of Abigail’s Rice Pilaf
  • ½ Cup (4 oz) Frozen Squash
  • ¼ Cup (2 oz) of Dried Cranberries
  • 1 tsp Olive Oil
  • ¼ Cup (2 oz) Pumpkin Seeds
  • 1 Cup (8 oz) of Spinach

DIRECTIONS

  1. Prepare Abigail’s Rice Pilaf using provided instructions. Adding additional lemon juice at the beginning. After half of cooking time, add frozen zucchini/squash, spinach and cook remaining 8-12 minutes or until rice is fully cooked.
  2. Mix olive oil, dried cranberries, and pumpkin seeds.
  3. Serve hot
